for the simple syrup
In a saucepan over medium heat, combine the honey & filtered water. Stir constantly until the honey has dissolved.
Add the ginger root and bring to a low boil. Cover, reduce heat and let simmer for about 15 minutes.
Remove from heat and let the ginger steep for about 1 hour or until the syrup has enough ginger taste for your liking.
Pour and strain the simple syrup into a jar with a cover. Store in the refrigerator for about two weeks.
for the cocktail
In a cocktail shaker or a mason jar, throw in the blackberries, Ginger Honey Simple Syrup, & vodka. Squeeze two halves of a lemon wedge & throw the them in. Muddle to break down the blackberries completely.
Fill two glasses with lots of ice. Squeeze half a lemon wedge into each drink, throw it into the glass.
Pour the muddled mixture through a strainer (or use a fork to keep the blackberry seeds & lemon rinds from getting into the drinks) between the two glasses. Fill the rest of the glass with seltzer. Garnish with a blackberry or two.
