Chili Lime Mango Pico de Gallo
This super simple & fresh Chili Lime Mango Pico de Gallo is a great addition to any dish. Enjoy it on top of fish tacos, as dip with chips, or eat it right out of the bowl!
I’m pretty sure pico de gallos are my favorite type of salads. They’re simple, fresh, delicious & fun. This Chili Lime Mango Pico de Gallo is sweet from the mangoes, crunchy from the cucumbers, tangy from the lime, a little spicy-smoky from the chili powder, and fresh from the cilantro.
CHILI LIME MANGO WHAT?
Ever try Tajin on mango? This is basically that but in “salad” form and using fresh ingredients. I love Tajin — it’s convenient in a pinch and great to rim margaritas and corona bottles and pretty much anything. But when you have chili powder and fresh limes, use them! The flavor combination of smoky, spicy, sweet, tangy is so delicious. Also, I just heard of Mangonadas and I need one in my life!
MAKE IT YOUR OWN
The best thing is any pico de gallo is flexible — you can add, remove, change it up to however you want it to taste. If you prefer more heat, add a jalepeno or serrano pepper. If you’re not a fan of cilantro, use parsley. Use diced bell peppers as the crunch factor instead of cucumber. Do whatever you want!
This Chili Lime Mango Pico de Gallo is a perfect pairing with grilled salmon, on top of Instant Pot Crispy Pork Carnitas tacos, scooped up with plantain chips, or eaten right out of the bowl.

Ingredients
- 2 ripe mangoes diced
- ⅓ cup red onion diced
- 1 cup cucumber diced
- 5-6 stems & leaves cilantro finely minced
- 1 lime juiced
- ¼ - ½ tsp chili powder depending on how smoky, spicy you want it
- salt to taste
- 1 jalepeno or serrano seeded & diced, optional
- 1 tomato seeded & diced, optional
