These are really, really, really good.  So good that this is now Matt’s favorite alcoholic drink of choice.  These Frozen Watermelon Margaritas were whipped up because I had the largest watermelon ever.  I’m still grocery shopping via online because in-store shopping still gives me too much anxiety at the moment.  I originally ordered a cute little sugar baby but they gave me a huge watermelon instead.  When life gives you a huge watermelon, make a Frozen Watermelon Margarita!

Does anyone else enjoy watermelon with salt?  This is the way I saw my mom eat watermelon as a kid, and it’s the only way I eat watermelon til this day.  This drink couldn’t even be more perfect with the combo of watermelon & salt.  Also, am I the only one that thinks of this scene when I hear watermelon?  Matt just told me that he named his fantasy football team “I carried a watermelon” one year, hahaha!

Freezing the watermelon cubes is easy — just take a baking sheet and line it with parchment paper, spread around the watermelon cubes to be one layer and give them some room so they’re not touching, pop them in the freezer for a few hours, & BOOM.  Once they’re frozen, I put them in a gallon freezer bag for easy storage.  Just don’t freeze them all, you need some fresh watermelon to get the blender going.  I suggest using fresh watermelon instead of water so there is even more fresh watermelon flavor.

IS THE HONEY NECESSARY IN THE FROZEN WATERMELON MARGARITA?

It all depends on how sweet your watermelon already is.  If you use those cute but super sweet sugar baby watermelon, you shouldn’t need any sweetener at all.  I only needed a small squeeze of honey to bring out the natural sweetness of the watermelon.

CAN THIS BE MADE INTO A MOCKTAIL?

For sure, I would just sub the tequila with a mixture of lime juice & water.  Another option is to add more fresh watermelon and after blending, pour a little lime flavored seltzer, stir, & serve!

Ingredients 

  • 1 heaping cup fresh watermelon cubed
  • 3 heaping cups frozen watermelon cubed
  • limes juiced
  • 4 - 5 oz silver tequila
  • small squeeze of honey about ½ - 1 tsp
  • lime slices for garnish & for glass rims
  • coarse salt for glass rims

Instructions

  • Put fresh & frozen watermelon, tequila, lime juice, and honey in blender. Blend until well combined & frosty. Rub a lime wedge on a small part of each glass and press into the coarse salt. Divide the frozen watermelon margarita between the two glasses and garnish with a lime slice.
