Fizzy & Spicy Pineapple Margarita

This Fizzy & Spicy Pineapple Margarita is simple and refreshing.  It’s salty, spicy, sour, bubbly, and a bit sweet from the ripe pineapple.  These are perfect for the warm weather heading our way!


Happy Cinco de Mayo!  And my third post on my blog!  What better way to celebrate than with a Fizzy & Spicy Pineapple Margarita recipe.

Margaritas are hands down my most favorite cocktail.  They’re good for any occasion — BBQ, girls night, or a night in with Netflix. When made right and not overly sweet, they’re such a refreshing drink that I never get a sugar headache from.

I personally love my margaritas more on the sour and tart side, so if you are not a fan of that, you can add a honey simple syrup to this recipe.  The ratio is 1:1 of honey and hot water.  I just boil/microwave water until very hot, and stir the honey in until it dissolves.  Add as much as you want to the drink.  You can also make this ahead and keep it in your fridge to sweeten other cocktails or coffee.

DO I NEED TO USE FRESH PINEAPPLES & LIMES FOR THIS MARGARITA?

I personally think fresh juices make a margarita taste that much better, but you can of course use canned and jarred juices from the store.  Just make sure there are no added sugars and taste almost as good as freshly squeezed — I like Santa Cruz Organic lime juice and Lakewood Pure Pineapple, both I found at Whole Foods.

WHAT CAN I USE IF I DON’T HAVE ANY FANCY COCKTAIL MAKING TOOLS?

Muddler: I don’t have one either, so I used the butt of my wooden spoon.  You can use the actual wooden spoon as well if it fits in your jar.

Cocktail shaker:  Use a thick bottomed mason that has a lid, you want something sturdy to muddle in.  And if you don’t have that, just use a large glass and a spoon to mix everything together.

Cocktail strainer:  Use a sieve to get those pineapple bits out or scoop them out with a fork.  I ended up adding some back to my drink and eating them.

Equipment

  • Muddler
  • Cocktail shaker with strainer
  • Two chilled cocktail glasses

Ingredients 

  • 1 big handful fresh pineapple cubes the riper, the better
  • 5 oz blanco tequila I used Casamigos. I also love Patron silver.
  • 2 oz lime juice
  • 1 tsp cayenne pepper use less or none at all
  • 1 tbsp coarse sea salt
  • lime slices
  • seltzer preferably lime flavored

Instructions

  • Place pineapple in a cocktail shaker or mason jar. Using a muddler, smoosh the pineapple as much as possible to extract all the juice out of it.
  • Add the tequila, lime juice, and a few cubes of ice. Cover with cocktail shaker top/jar lid. Shake it up, shake it up.
  • Place coarse salt and cayenne pepper on a small plate and swirl around to mix. Rub a lime wedge on the rims of the chilled cocktail glasses. Turn the glass upside down into the cayenne-salt mixture.
  • Add ice to the glasses and pour the margarita into the glass. Top with enough seltzer to fill the glass to the top and garnish with lime.

Notes

  • Don't have a muddler?  I don't have one either but using a wooden spoon or the butt of it works just as good.
  • If you don't have a cocktail strainer, use a fine mesh sieve.
  • I also don't have a cocktail tumbler, so I used a thick bottomed mason jar.  You want the bottom think since we need the foundation for muddling.
  • Where's the triple sec?  I personally think margaritas taste better without them.  But if you must, add 1 oz to the mixture.
  • If you're more a sweet, spicy and sour fan, use sugar instead of coarse salt.
  • Sub chili powder for cayenne for a smoky taste.
  • Make a honey simple syrup to sweeten it up if needed.  The ratio is 1:1 of honey and hot water.  Boil/microwave water until very hot, and stir the honey in until it dissolves.
  • What about the smooshed pieces of pineapple left in the cocktail shaker?  You garnish your drink with them... or let them soak in the leftover tequila for a bit and then snack on them 🙂
