This Cucumber Margarita is a spa day in a glass.  You’ll want to lean back, put your feet up & relax with this delicious, refreshing drink.

I made this Cucumber Margarita on this past Mother’s Day.  I had the best day of being with my family, Penny giving me freshly picked flowers, visiting our mothers (at a social distance, of course), & eating king crab legs my parents gave me.  After Penny went to bed, I still wanted to relax and this Cucumber Margarita hit the spot.  It’s light, refreshing, and not sugary sweet.

WHY IS IT ALSO CALLED “MATT’S MARGARITA”?

Matt is my husband and he also lives for a refreshing drink.  He’s never been mad at a cucumber mixed drink, so this is definitely up his alley.

WHAT WILL I NEED TO MAKE THESE CUCUMBER MARGARITAS?

The lineup is simple:

  • Silver Tequila
  • Cucumber
  • Lime
  • Honey Simple Syrup
  • Seltzer

For the silver tequila, I recommend using good quality.  A few that I like are Casamigos, Patron, and Milagros.

The Honey Simple Syrup could be optional but this small amount of sweetness does add to the drink.  A teeny bit is used on the rim of the glass as well, so whenever you take a sip it’s a teeny bit sweet, teeny bit salty.  If you have the ingredients (just honey and water!), definitely make it!  It’s easy and quick to whip up, and the recipe below has some leftovers to use in more cocktails.  You can also refrigerate the leftovers and use it in your morning coffee or tea.  And since this drink is only sweetened with honey, it’s paleo friendly.

WILL I NEED ANY FANCY TOOLS TO MAKE THIS CUCUMBER MARGARITA?

Nope!  Just use the butt of a wooden spoon as your muddler and a large enough mason jar with a lid as your cocktail shaker.  If you can fit your wooden spoon in the jar, that’ll make it even easier!

Ingredients 

  • 5 oz silver tequila
  • 8 cucumber slices
  • 1 lime juiced
  • 1 tsp honey simple syrup recipe below
  • seltzer water
  • coarse sea or pink salt optional
  • thin cucumber slices for garnish
  • lime wedges for garnish
  • ice

Honey Simple Syrup

  • 2 tbsp honey
  • 2 tbsp water

Instructions

Honey Simple Syrup

  • In a microwave safe bowl, bring the 2 tbsp of water to a boil, about 30-45 seconds.
  • Stir the 2 tbsp of honey into the boiling water until completely dissolved. Set aside to cool.

Cucumber Margarita

  • Prep cocktail glasses: Put coarse salt on a small plate. Take a lime wedge dipped in a little honey simple syrup and rub it on the rim of each glass. Turn the glass upside down into the salt. Add ice.
  • In a cocktail shaker or mason jar, put cucumber slices, lime juice, honey simple syrup, and tequila. Muddle the cucumbers well to extract their juices. Cover cocktail shaker/mason jar and shake it up. Pour the margarita in the glass. Top with enough seltzer to fill the glass to the top. Garnish with cucumber slices and a lime wedge.

Notes

  • There will be about ¼ cup leftover of the honey simple syrup.  Make more drinks or  save this in the jar in the fridge for your next cocktail or use it in coffee or tea.
