Cucumber Mint Freeze

This deliciously, delightful Cucumber Mint Freeze could be eaten with a spoon or enjoyed as a frozen drink. The ingredients are simple & it all comes together in a blender.  The booze is also optional, so everyone can enjoy this refreshing treat!

Is anyone surprised that we have another cucumber drink?  We just so happen to have a ton of cucumbers lately.  So when I asked Matt if he would like a cucumbery-minty-frozen-drink-treat, his eyes lit up!

I couldn’t figure out what to call it either since when I initially made it, I wanted a boozy frozen treat to eat with a spoon.  But you can just add a little water (or a tad more alcohol) to make it a frozen cocktail.  So a Cucumber Mint Freeze it is!

The Cucumber Mint Freeze comes together so easily — you just need a blender.  This is the blender we have and we love it!  I also split it into two steps because I wanted to make sure the mint leaves are obliterated so there aren’t any big chunks of mint leaves & cucumber being consumed.  And make sure to peel your cucumber before blending it as the green skin would make the drink too bitter.

I used a good silver tequila, Patron, but you can definitely try vodka.  We’ve tried this cucumber vodka before and it’s smooth and tasty.  I think a white rum would be great so it’s kind of like a frozen mojito.  Or don’t add the alcohol at all and everyone can enjoy this refreshing freeze!  I let Penny try it (without the tequila of course!) and she kept asking for, “Mo, mo, mo.”

An addition of fresh strawberries or watermelon for added fresh flavor would be amazing.  Or sub the ice cubes for frozen strawberries or watermelon!  It’s super flexible!

This would be perfect to pair with my Instant Pot Crispy Pork Carnitas and Broiled Pineapple Guacamole.

Ingredients 

  • handful of mint leaves about 16 leaves
  • 1 small cucumber about 5-6 inches, peeled
  • 1 ½ limes juiced
  • 4 - 5 oz silver tequila, vodka (cucumber vodka would be amazing), or white rum leave out for a mocktail
  • 4 oz water optional, use if not wanting a scoop-able treat
  • squeeze of honey about 1 ½ tsp, can sub white sugar is preferred
  • lots of ice I used about 12-15 ice cubes
  • lime slices for garnish
  • mint leaves for garnish

Instructions

  • In a large blender, place mint leaves, cucumber, lime juice, and sweetener of choice. If you would like to enjoy this drink through a straw, add the water. Add the vodka/tequila/white rum for a boozy drink. Blend it all up well. Then add the ice and blend until you a nice frosty texture. Divide between 2 glasses and garnish with a lime slice and mint.
